Chinese cuisine isn't one thing โ€” it's eight major regional traditions, each radically different. Shandong (้ฒ่œ) is the oldest, known for seafood and subtle flavors. Be specific: say 'ๆˆ‘ๆ˜ฏ็ด ้ฃŸไธปไน‰่€…๏ผŒไธๅƒ่‚‰ใ€้ฑผใ€่›‹ๅฅถ' (I am vegetarian and don't eat meat, fish, eggs, or dairy) for strict requirements. Halal (ๆธ…็œŸ) restaurants are common in Muslim-majority areas like Xi'an's Muslim Quarter.

4Food Safety

China's food safety has improved dramatically. In cities and tourist areas, restaurants are regularly inspected. Stick to cooked food, avoid raw seafood from unknown sources, and never drink tap water. Bottled water is cheap and available everywhere.
